we have a mystery grandfather whose birth, marriage and death cannot be found. None the less he fathered six children and is named on all the birth certificates and mother is shown with the same surname and her nee name.

Personally I add them as parents to the children and just leave the marriage blank. Sometimes I add a note to the effect I can't find a marriage.
I do as Totnor does, but, if you go to the 'Edit Person' screen and click on the line where it says 'Spouse' then look along to the right there are two boxes, one says 'Wife Label' the other says 'Husband Label', you can use the drop down menu to give you 'Partner'. I haven't used this so I don't know how it appears in reports.
